Introduction
Xanthan gum, an extracellular bacterial polysaccharide, is produced through fermentation by Xanthomonas campestris using succrose. Xanthan gum consists repeating units of five monosacchanides formed by two D-glucose, two D-mannose, and one D-glucuronic acid. The molecular weight of Xanthan gum is between 2× 106~2× 107. It possesses outstanding viscosity-enhancing property and solubility in water and is excellent stable to a large range of temperatures and pHs. The gum can be widely used in medicine and daily chemical field.

Xanthan gum with the antioxidant activity has protective effects on the easily oxidized substances. In addition, xanthan gum can be used as medical raw materials, with preparation of joint cavity injection, for the improvement and the treatment of osteoarthritis.
